Minestrone Soup

2 lbs. navy beans

5 oz. bacon fried bacon pits or pieces

10 oz. diced onion

5 oz. diced carrots

8 oz. diced celery

8 oz. diced cabbage

2 ¼ gal. hotbeef stock

1 ¼ qt. canned tomatoes

10 oz. dices potatoes

1 ½ tsp salt

¾ tsp pepper

¼ tsp thyme

1 clove crushed garlic

5 oz chopped spinach

1 oz. oil

10 oz. raw macaroni

Bring beef stock to a boil, add the rest of the ingredients.  Makes 3 gallons
