Aunt Spranza’a Biscotti

((Seriously, how many biscotti recipes does one hillbilly need? It seems I have quite the family collection of these!))

Makes 3-4 1/2 dozen

Bake at 350 degrees for  10-20 minutes

Beat    6 eggs

Blend into eggs  1 cup sugar

Add 1 cup vegetable oil

Add   3 cups of sifted flour

4 TSP Baking Powder

Pinch of salt

1 1/2 tsp Anise oil  or  3tsps  Anise extract

Also use   1 small bottle of orange extract and 1 small bottle of lemon extract

Spray pan     pour in 1 to 1/1/2 inches of batter in pan

^note this a small baking pan the kind for brownies

Also, this batter will be closer to a cake batter

It will not form a loaf before baking

Bake at 350 for 10 to 20 minutes

check frequently with toothpick

turn out to cool

when cool;  slice down center of pan   then slice in 1/2 inches apart

lay the slices on a cookie sheet and toast both sides    4 minutes at 350 degrees
