Aunt Mary’s Zucchini Cake

3 eggs

1 ¾ cups sugar

2 cups raw shredded zucchini

1 cup oil

2 ½ flour – sift

1 tsp salt

2 tsp cinnamon

2 tsp baking soda

1 tsp baking powder

2 tsp vanilla

1 cup raisins and nuts

Beat eggs and oil.  Beat again.  Add dry ingredients.  Beat again all together.  Add vanilla, nuts, or raisins or both.

Bake 350 degrees for 50 – 60 minutes.

Note: I dont remember ever having a slice of zucchini cake in my life- but I have head zucchini bread… so this may come out dense.
