Pumpkin Roll

Cream until light, 3 eggs, 1 cup sugar.  Fold in 2/3 cup pumpkin, 1 tsp lemon juice, fold in ¾ cup flour, 1 tsp baking powder, 2 tsp pumpkin pie spice.

Filling: one 8 oz. cream cheese, 1 tsp vanilla, 1 cup powder sugar, 4 Tbls .melted  butter, mix well together.

Cake part:  Mix all ingredients for cake mixture together.  Then pour  into greased cookie sheet lined with greased wax paper, grease wax paper good.  Then sprinkle mixture with chopped nuts.  Bake at 375 for 15 mins.  Sprinkle tea towel with powder shugar, then put cake on towel.  Remove wax paper gently, sprinkle again with powdered sugar.  Roll tea towel and cake , let cool 1 hour.  Do not try to fill and roll it yet or the warm cake will melt the filling.  Unwrap after 1 hour, spread the filling, re-roll the pumpkin roll.
